Summer Trifle

This is something that I like to make every summer. It looks complicated and your guests will think you spent a ton of time working on it, but it is the simplest thing in the world to make.
- 1 Store Bought (I use whatever I have a coupon for) Frozen Pound Cake defrosted and sliced (I also then cut the slices in half)
- 1/2 cup of orange juice (or any kind of juice, heck you could even use a liqueur if you are so inclined)
- 1 pound of hulled and sliced Strawberries (fresh is preferred, but if making this out of season you can use frozen just defrost and drain)
- 1 package of Blueberries (see above)
- 2 packages of Prepared Instant Vanilla Pudding Mix
- Now this is the hardest part. I prefer to make my whipped cream so you can choose either 1 Large container of whipped topping (i.e. Cool Whip) or
- 1 pint Heavy Whipping Cream, 2 tablespoons of sugar and 1 teaspoon of vanilla beaten until stiff peaks are formed.
Start with layering the pound cake on the bottom of the bowl. This is why cutting the slices in half help, it makes them easier to fit.
Using a pastry brush (or not) sprinkle some of the orange juice on each slice of bread.
Layer half of the sliced strawberries and half of the blueberries.
Cover with half of the Vanilla pudding and then half of the whipped cream. Repeat.
Garnish with a couple of the fruit pieces and maybe even a sprig of mint.

I really love making trifles when I'm having company. The one I usually make is brownies from scratch (super easy recipe), chocolate pudding, sliced fresh strawberries, and cool whip (although I suppose you could make your own whipped cream to make it even better). It's really easy and looks SO impressive!
