Monday - Slow Cooker Sloppy Joes with rolls and side veggies of your choice

  • Time Saving Tip: Brown your ground beef the weekend before and store in a freezer bag.

Tuesday - Herb Sliders with baked potato chips and fruit salad

  • Kid Pleaser Alert: Kids will love that these burgers are
    miniature and might even overlook a few veggies thrown on top of their
    burger.

Wednesday - Slow Cooker Vegetarian Chili, side of rice or Cornbread Supreme

  • Time Saving Tip: Prep your veggies on Sunday and store in a
    Ziploc bag. You may want to add a bit of shredded cheddar cheese and a
    dollop of sour cream to your bowl of chili if you are anything like me,
    and love garnishes.

Thursday - Italian Chopped Salad in Shells, side of garlic bread

  • Make it Stretch Tip: Add cubes of mozzarella, fontina, olives or a can of drained and rinsed cannellini beans.

Friday - Szechuan Noodles with Spicy Beef Sauce

  • Ingredient Swap Tip: Fresh Chinese noodles can be found in many
    grocery stores these days (check where they keep the wonton and egg
    roll wrappers). If you can’t find them, you can swap out any thin,
    dried noodle instead. Your cooking time for boiling the noodles will
    change, but the flavor will still be great.

Saturday - Cheesy Ham and Hash Brown Casserole

  • Veggie Sneaking Tip: Add in mushrooms, diced bell peppers or  chopped onions to spice this up.

Sunday - Pizza Pasta Casserole, side salad of your choice

  • Time Saving Tip: This recipe makes two casseroles. Freeze one for later!

Monday: Calico Beans and Cornbread Supreme

  • Time Saving Tip: Rather than taking the time to cook and crumble the bacon for the Calico Beans, buy a package of pre-cooked and crumbled bacon from the grocery store.

Tuesday: Korean Hamburgers, Oven Fries

  • Time Saving Tip: Mix the burgers the weekend before and portion into patties. Stack the patties, separating layers with wax paper, and cover with plastic wrap, then foil. Add however many burgers your family will eat in one meal per freezer storage bag. Store in the freezer. This works great when making double batches . All you have to do is pull out one of your packages and stick it in the fridge in the morning.

Wednesday: Veggie Sandwiches, side of fruits of your choice

  • Time Saving Tip: Cut and store all vegetable ingredients in the morning. At dinner time, arrange all ingredients on the counter and allow kids and adults to create their own veggie sandwich with the ingredients of their choice.

Thursday: Sweet and Savory Spinach Salad

  • Time Saving Tip: In the morning, place the salad ingredients in a large bowl, starting with the toppings, then the spinach on top. Cover and store in the fridge. Add the dressing immediately before serving.

Friday: Chicken Waldorf Pizza, side salad of your choice

  • Time Saving Tip: There are many pizza dough options out there. To save even more time, buy an already baked pizza crust from your grocery store.

Saturday: Broccoli, Ham and Cheese Egg Bake

  • Time Saving Tip: In the morning, combine the ham, Parmesan cheese and cheddar cheese in a Ziploc bag. Set inside a large mixing bowl. Add eggs (not cracked!). Cover if needed. Pull out the bowl with your prepped ingredients when it is dinner time.

Sunday: Pastrami Mac and Cheese, side of store bought garlic bread

  • Time Saving Tip: When you buy the pastrami at a meat counter at your local grocery store, ask them to cut it into one thick slice. This will make dicing quick and easy.

Weekly Menu Plan - March 8, 2008

Monday - Amish Meatloaf, side of veggies of your choice

  • Time saving tip: When buying ground beef in bulk, portion out one and two pound portions into freezer bags. The day before making, pull out a two pound portion to thaw in the fridge.

Tuesday - Cornflake Crusted Baked Chicken, side of potatoes

  • Time saving tip: On a weekend where you are prepping ingredients, add half a box of cornflakes to a freezer ziploc bag and use a rolling pin to crush the flakes into small pieces. Store in the freezer for future use.

Wednesday - Mom’s Gourmet Grilled Cheese Sandwich, side of tomato soup

  • Ingredient Swap: I would recommend using a nice whole grain bread or white bread instead of sourdough. Sourdough has a very strong smell when used on a grilled cheese sandwich, which kids (and adults) might find too much to handle. (I found this out when I was pregnant and made a grilled cheese with sourdough.)

Thursday - Lemon Chicken Spaghetti Toss, side of garlic bread

  • Recipe tip: Be careful to not overcook your chicken pieces. Tough and chewy chicken is the worst!

Friday - Avocado Tacos (Vegetarian), side of Mexican Rice

  • Time saving tip: Store a large freezer bag with diced onions in your deep freeze. If you take the time to cut a bunch of onions over the weekend, you can save yourself the time (and maybe a few tears!) when using onions in recipes through out the month.

Saturday - Shrimp & Pork Fried Rice, Sweet and Sour Pork, Crab Rangoon (Mix and match according to family size)

  • Time saving tip: Make the rice for the Fried Rice a day (or a few days) ahead of time.

Sunday - Cinnamon Belgian Waffles, side of scrambled eggs and turkey bacon

  • Time saving tip: Make several batches of waffles over the weekend. Store in the freezer. When ready to use, pop a few into the toaster and you are set to go.

Weekly Menu Plan - March 1, 2008

Monday - Lemon Chicken with Croutons

    * Leftovers Tip: Leftover lemon chicken would be delicious in a chicken salad (especially one with cranberries. YUM!)

Tuesday - Roast Cod with Crisp Potatoes

    * Ingredient Swap Tip: Any white fish should work great in this recipe. Only have tilapia on hand? Use it!

Wednesday - Slow Cooker Pot Roast

    * Leftovers Tip: If you have a good amount of pot roast left over, make a shepherd’s pie! Shred or chop the roast into chunks. Add more veggies (mushrooms, carrots, etc.), add a layer of mashed potatoes, then top with cheddar cheese. Pop it into the oven to warm through and get browned on top.

Thursday - Ritzy Chicken Nuggets

    * Time Saving Tip: Take a few minutes on a weekend to make bread crumbs and stash them in the freezer. I use Ritz bread crumbs for Ritzy Chicken Nuggets and Amish Meatloaf, so it behooves me to keep them on hand. Empty a few sleeves of crackers in a large, sealed Ziploc and bash it with a rolling pin. After about 20 seconds, you’ve got yourself enough bread crumbs to last a good while.  

Friday - California Grilled Veggie Sandwich

    * Ingredient Swap Tip: Substitute diced fontina cubed for the feta cheese for the younger kiddos.

Saturday - Ultimate Spaghetti Carbonara

    * Leftovers Tip: If you have leftover carbonara to use up, try making a spaghetti pancake. In a bowl, mix an egg with some Parmesan and other cheeses of your choice. Add the spaghetti and mix. In a large saute pan, add a bit of oil and a dab of butter to a pan heated to medium. Add the spaghetti/egg mixture. Cook until browned on the bottom, and flip. Cook until browned on this side and serve.

Sunday - Tomato Sandwich with Basil Mayonnaise

    * Ingredient Tip: Adding a dash of salt and pepper directly to the tomatoes brings out their flavor.

    I’ve already made my menu for this week, but I definitely want to try a couple of these recipes next week. Especially the Pizza Pasta Casserole. I love all three of those things, so an all in one has to be good. :)
